When peeling potatoes, submerge them in a bowl or pot of cold water (once they are peeled) to prevent them from browning. This is particularly helpful when you are peeling a lot of potatoes.

Cooking Tip: How to Secure Your Cutting Board

If your cutting board doesn’t have grippers, a great way to keep it secure is to place it on top of a damp towel or paper towel. This is important because if your cutting board is moving around while you’re chopping, you are more likely to cut yourself.

Always start your cooking adventure with a clean work area, and be sure to give yourself plenty of clutter-free counter space. It’s also helpful to have all of the necessary tools and equipment out of the drawers or, at least, within close reach. This will make it easier to stay organized and streamlined right from the get-go.

Cooking Tip: Handling Hot Chile Peppers

Immediately wash your hands after slicing hot Chile peppers, and, whatever you do, don’t touch your eyes! The oils in the pepper will cause your skin and eyes to burn. If you cook often with chile peppers, rubber gloves are a highly recommended investment.

Cooking Tip: How to Calibrate Your Meat Thermometer

Make sure your meat thermometer is properly calibrated. To test its accuracy, hold it in boiling water using tongs. If it doesn’t read 212°F or within one or two degrees, then you need to adjust your thermometer. Repeat the test, this time in a bowl filled with crushed ice and water. It should register 32°F; adjust accordingly if it doesn’t. Most dial thermometers will allow you to adjust the dial to the proper temperature. We like to check ours a couple times a year.
