Cooking Tip: How to Speed the Ripening of Avocadoes and Tomatoes

Place avocadoes or tomatoes in a paper bag along with an apple to hasten the ripening process (apples emit ethylene gas, a natural ripening agent) and keep them at room temperature. Once ripe, avocadoes can be refrigerated for up to 3 days, but be sure not to refrigerate tomatoes as this will make them mealy.

Good tip!  I do this with peaches.  Just make sure to keep an eye on them because they can over-ripen pretty quickly.  Also, my avocados usually last a lot longer than 3 days in the frig, fwiw.  :)
