Here's a sure-fire way: place the eggs in a saucepan and then add enough cold water to cover the eggs by about 2 inches. Bring the water to a boil. Once the water is boiling, cover the saucepan and remove it from the heat. Let it sit for 12 minutes. Drain the hot water and run the eggs under cold water to cool. They'll keep in the refrigerator for up to a week.
