Broiling is one of the easiest and most delicious ways to prepare salmon. It gives you a crisped top and succulent middle. And so quick cooking, it will be done before your table is set!

Heat the broiler. Adjust oven rack to the second position from the top. Rub the salmon with oil (1/2 tsp. per piece) and season with salt and pepper (1/8 tsp. salt & 3 turns on pepper mill per piece). Slice 2 of the lemons into 12 slices total. On a sheet pan, arrange the lemon slices into 4 rows of 3. Top each row with 6 sprigs of thyme then with the salmon pieces. Broil until the salmon flakes easily, 5 to 8 minutes (depending on thickness). Serve with the extra lemon, quartered, for squeezing.

Just made this, it was excellent! The thyme flavor really does seep through into the salmon. Just as described, crispy on the outside and moist on the inside. Very quick and easy. I will take more care next time to get a more evenly thick fillet, as the thicker portion took much longer to cook than the thinner portions, obviously.

The second time I made it, I decided to do a variation of the recipe and used rosemary with the lemon, and then wrapped the salmon in foil and poured white wine on top and baked it….It was perfect as well.
