Delicious and oh so good for you, this spinach dish takes only a few minutes to prepare, and is an easy and healthy side to almost anything!

Wash and dry the spinach. Heat the oil in a large skillet over medium heat. Add the garlic and cook until fragrant (do not let brown), about 30 seconds. Add half of the spinach and cook, turning with tongs, until it begins to wilt, about 1 minute. Add the remaining spinach and season with the salt and pepper (12 turns on pepper mill) and continue to cook, turning, until wilted, 2 to 3 minutes.

Or omit the raisins and after removing from the heat, squeeze a touch of lemon on it or sprinkle with a bit of lemon zest. Do it! Delicious!
